Mini Corn Dog Muffins

Yields 16

1 package Jiffy Corn Muffin Mix
1 egg
1/3 cup milk
3-4 hot dogs
Nonstick cooking spray

Preheat oven to 400 degrees F.  Generously coat cups of mini muffin pan with nonstick cooking spray and set aside. Prepare corn muffin mix as instructed on box: whisk together egg and milk and stir in dry muffin mix until incorporated and still slightly lumpy. Allow to rest for 5 minutes. Cut hot dogs into 1-inch pieces.

Easy Cheesy Sloppy Joe Bombs

Yields 16

2 cans crescent rolls 16 rolls total
1 pound ground beef
15 ounces sloppy joe sauce
1 1/2 cups shredded cheese
Italian seasoning to taste

Preheat oven to 350 degrees F. Grease 16 cups in muffin tins.  Brown and crumble ground beef until cooked through. Drain meat if desired. Add sloppy joe sauce, and heat until warmed through.  Meanwhile, place one crescent roll into each muffin cup. Press dough into the muffin tin and up the sides, creating a little base for the bombs.  Spoon about two tablespoons of sloppy joe mixture into each roll lined muffin cup. Sprinkle grated cheese over the meat in each cup.  Pull corners of crescent roll up to cover filling, and pinch together. (Don’t worry if there is cheese and sloppy joe mixture peeking through cracks in the crescent roll. It will be okay!).  Sprinkle tops of Easy Cheesy Sloppy Joe Bombs with Italian seasoning.  Bake for 12-14 minutes, until tops are golden brown. Let sit for about 3-5 minutes then serve!

Turkey & Swiss Sliders

Yields 12

1 pack Hawaiian Rolls
3/4 cup whole grain mustard or honey mustard
1/2 cup Mayonnaise
6 slices Swiss cheese
9 oz smoked turkey
4 tablespoons butter melted

Preheat the oven to 350 F.  Cut the rolls lengthwise so you have two big pieces.  Spread  1/4 cup mustard and mayonnaise on each side of the rolls. Place the bottom roll in a pan, top with half of the turkey, Swiss cheese and the rest of the turkey. Place the other half of the rolls on top.  Mix butter and 1/4 cup remaining mustard. Brush it on the rolls.  Bake in the oven for 15 minutes until the cheese is melted.  Serve warm.

Pepperoni Pizza Cupcakes

Yields 18

18 small wonton wrappers about 3-4″ in width
1 1/2 cups finely diced pepperoni
1 cup finely diced red pepper
3/4 cup pizza sauce
1 cup shredded mozzarella cheese

Spray a muffin pan with non-stick spray and preheat the oven to 350 degrees F.  Combine pepperoni, pepper and pizza sauce in a bowl.  Lay one wonton wrapper in the bottom of 9 muffin cups. Press the wrapper in right to the edges so that it sticks to the non-stick  spray. Lay another over top, and press down.  Fill each wonton cup with filling, spreading evenly.  Top with cheese and bake about 15 minutes until edges are golden and cheese is bubbly. Let cool slightly before eating.

Crock Pot Sweet & Spicy Wings

2½ pounds Chicken Wings, thawed
18 ounces Sweet Baby Ray’s Sweet ‘n Spicy Barbecue Sauce {1 bottle}
¾ cup Pineapple Preserves
1 teaspoon Crushed Red Pepper

Place Chicken Wings in Crockpot.  Cover with lid and cook on HIGH for 2.5 hours.  After 2.5 hours, remove juices from Crockpot.  In small mixing bowl, combine Pineapple Preserves and BBQ Sauce and stir well.  Pour mixture over chicken. For crispier wings, retain ¾ cup of sauce mixture and set aside for later. {see broiling instructions below}
Cover Crockpot, and cook for 30 minutes more, or until done.  Optional: Sprinkle with Red Pepper Flakes for an extra punch of heat. ENJOY!!
For crispier wings, place cooked wings on foil lined cookie sheet and drizzle with ¼ cup of the remaining sauce and place under Broiler for 5 minutes, then flip wings and drizzle with another ¼ cup of sauce and place under broiler for an additional 5 minutes, then flip once more, drizzle with remaining ¼ cup of sauce, and place under broiler for 5 more minutes. ENJOY!
